  • 1 cup sugar
  • 2/3 cup plant-based shortening (e.g., Becel)
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 3 tsp ground cinnamon

Instructions:

  1. In a saucepan, combine 2 cups water, 2 cups chopped dates (or raisins), 1 cup molasses, 1 cup sugar, and 2/3 cup plant-based shortening. Bring to a boil, then remove from heat and let the mixture cool.
  2. Preheat your oven to 350°F (175°C). Grease a tube pan (also known as an angel food cake pan).
  3. In a separate bowl, sift together 3 cups flour, 1 tsp baking soda, and 3 tsp cinnamon.
  4. Once the boiled mixture has cooled, add the sifted dry ingredients to it. Mix until well combined.
  5. Pour the batter into the greased tube pan.
  6. Bake at 350°F (175°C) for about 1 hour, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10-15 minutes before removing it to a wire rack to cool completely.
