- 1 cup sugar
- 2/3 cup plant-based shortening (e.g., Becel)
- 3 cups all-purpose flour
- 1 tsp baking soda
- 3 tsp ground cinnamon
Instructions:
- In a saucepan, combine 2 cups water, 2 cups chopped dates (or raisins), 1 cup molasses, 1 cup sugar, and 2/3 cup plant-based shortening. Bring to a boil, then remove from heat and let the mixture cool.
- Preheat your oven to 350°F (175°C). Grease a tube pan (also known as an angel food cake pan).
- In a separate bowl, sift together 3 cups flour, 1 tsp baking soda, and 3 tsp cinnamon.
- Once the boiled mixture has cooled, add the sifted dry ingredients to it. Mix until well combined.
- Pour the batter into the greased tube pan.
- Bake at 350°F (175°C) for about 1 hour, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10-15 minutes before removing it to a wire rack to cool completely.
