- 1 head of cauliflower, riced (or 12 oz of pre-riced cauliflower)
- 2 tablespoons coconut oil or other cooking oil
- 2 large eggs, beaten

- 1/2 cup diced onion
- 1/2 cup diced broccoli florets
- 1/2 cup diced carrots (in moderation due to the carb content)
- 2 cloves garlic, minced

- 1/2 teaspoon ginger paste or freshly grated ginger

- Prepare the Cauliflower Rice:
- If you’re using a whole cauliflower, cut it into florets and then pulse in a food processor until it resembles rice. Alternatively, you can use pre-riced cauliflower.
- Cook the Eggs:
- Heat 1 tablespoon of oil in a large skillet over medium heat. Add the beaten eggs and cook them like scrambled eggs. Once cooked, remove them from the skillet and set them aside.
- Saute the Veggies:
- In the same skillet, add the remaining oil. Add the diced onion, garlic, and ginger. Sauté for a few minutes until the onion becomes translucent.
- Add Veggies and Cauliflower Rice:
- Add the diced bell peppers, broccoli, and cauliflower rice to the skillet. Cook and stir for about 5-7 minutes, or until the veggies are tender and the cauliflower rice is heated through.
- Stir in Soy Sauce:
- Pour the soy sauce or coconut aminos over the cauliflower rice and vegetable mixture. Stir to combine and cook for another 2-3 minutes.
