Low-Point Easter Fudge

Ingredients

  • 1 cup fat-free sweetened condensed milk
  • 1 cup white chocolate chips (sugar-free if available)
  • 1 tbsp light butter or light margarine
  • 1 tsp vanilla extract
  • 2 tbsp fat-free Greek yogurt
  • 2 tbsp pastel sprinkles (optional for Easter look)
  • 1–2 tbsp mini sugar-free chocolate chips (optional)

Instructions

  1. Prepare pan:
    Line a small 8×8 pan with parchment paper.
  2. Melt mixture:
    In a microwave-safe bowl combine sweetened condensed milk, white chocolate chips, and light butter.
    Microwave in 20–30 second intervals, stirring until smooth.
  3. Add flavor:
    Stir in vanilla extract and Greek yogurt until creamy.
  4. Add Easter toppings:
    Fold in mini chocolate chips and half the sprinkles.
  5. Set fudge:
    Pour mixture into the prepared pan and smooth the top.
  6. Decorate:
    Sprinkle remaining pastel sprinkles on top.
  7. Chill:
    Refrigerate 2–3 hours until firm.
  8. Cut:
    Cut into 12 small squares.
