Low-Point Easter Fudge

Ingredients
- 1 cup fat-free sweetened condensed milk
- 1 cup white chocolate chips (sugar-free if available)
- 1 tbsp light butter or light margarine
- 1 tsp vanilla extract
- 2 tbsp fat-free Greek yogurt
- 2 tbsp pastel sprinkles (optional for Easter look)
- 1–2 tbsp mini sugar-free chocolate chips (optional)
Instructions
- Prepare pan:
Line a small 8×8 pan with parchment paper. - Melt mixture:
In a microwave-safe bowl combine sweetened condensed milk, white chocolate chips, and light butter.
Microwave in 20–30 second intervals, stirring until smooth. - Add flavor:
Stir in vanilla extract and Greek yogurt until creamy. - Add Easter toppings:
Fold in mini chocolate chips and half the sprinkles. - Set fudge:
Pour mixture into the prepared pan and smooth the top. - Decorate:
Sprinkle remaining pastel sprinkles on top. - Chill:
Refrigerate 2–3 hours until firm. - Cut:
Cut into 12 small squares.

Tips for Even Lower Points
- Use sugar-free white chocolate chips.
