Dolly Parton’s Five Layer Dinner (Weight Watchers version)
Ingredients:
- 1 lb extra-lean ground turkey
- 1 small onion, chopped
- 1 cup sliced carrots
- 1 cup diced potatoes
- 1 cup frozen green beans
- 1 cup diced tomatoes (canned, no salt added)
- Salt and pepper, to taste
- 1 tablespoon olive oil
Instructions:
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add onions and ground turkey. Cook until turkey is browned and onions are translucent.
- Spread the ground turkey mixture evenly on the bottom of a baking dish sprayed with non-stick spray.
- Layer sliced carrots on top of the turkey mixture.
- Next, layer diced potatoes over the carrots.
- Add a layer of frozen green beans.
- Spread diced tomatoes over the green beans.
- Season with salt and pepper to taste.
- Cover the baking dish with foil and bake for 45-50 minutes, or until vegetables are tender.
- Remove foil and bake for an additional 10-15 minutes to allow the top to brown slightly.
- Let it cool for a few minutes before serving.
