- 2 cups shredded zucchini
- 1 tsp salt
- 2 cups shredded carrots
- 1½ cups sweetcorn kernels
- 2 cloves garlic, minced
- ⅔ cup all-purpose flour
- 1 tsp baking powder
- ⅓ cup chopped scallions
- 1 tsp red pepper flakes
- Salt and pepper to taste
- 2 tbsp olive oil
- Begin by preparing the zucchini. Shred the zucchini and place it in a colander. Sprinkle with salt and allow it to sit for 10-15 minutes to drain excess liquid. Using your hands, squeeze the zucchini to remove as much liquid as possible.
- In a large bowl, combine the shredded zucchini, carrots, sweetcorn kernels, minced garlic, all-purpose flour, baking powder, chopped scallions, red pepper flakes, salt, and pepper. Thoroughly mix the vegetable mixture to ensure even distribution of ingredients.
- Prepare a paper towel-lined plate before starting to cook the fritters. Heat olive oil in a sauté pan over medium to medium-high heat. To test if the oil is hot enough, drop a small piece of fritter batter into the oil; it should sizzle immediately.
- Using a tablespoon, scoop approximately 3 tablespoons of the vegetable fritter batter and place it in the pan. Flatten the batter to form a patty shape. Repeat the process, leaving about an inch of space between each fritter. Cook the fritters for 2-3 minutes on each side until golden brown.
- Once the fritters are golden brown and crispy, transfer them to the prepared plate to drain excess oil. Repeat the cooking process until all fritters are cooked.
- Serve the crispy vegetable fritters immediately, accompanied by your favorite dipping sauce, and savor the delightful combination of flavors and textures.
- These crispy vegetable fritters are not only delicious but also packed with nutrients, making them a wholesome addition to any meal or snack time.
- Feel free to customize the recipe by adding your favorite herbs and spices or incorporating other vegetables such as bell peppers or spinach for added variety and nutritional benefits.
- For a healthier alternative, you can bake the fritters in the oven instead of pan-frying them. Simply place them on a baking sheet lined with parchment paper and bake at 375°F for about 20-25 minutes until golden brown and crispy.
- These fritters make a fantastic appetizer, side dish, or even a light main course. Serve them at your next gathering or enjoy them as a satisfying snack any time of the day.
- Experiment with different dipping sauces such as tzatziki, sweet chili sauce, or garlic aioli to complement the flavors of the fritters and enhance your dining experience.
