Ingredients:
- 1 1/2 heaping cups fresh broccoli florets
- 1 cup shredded vegan cheddar cheese
- 1 cup shredded vegan mozzarella cheese
- 4 oz vegan cheese (e.g., dairy-free cheddar or mozzarella), diced into small pieces
- 1/2 tsp crushed red pepper flakes
- 2 1/4 cups Panko breadcrumbs, divided
- 1 flax egg (1 tablespoon ground flaxseed meal + 3 tablespoons water)
- 1/2 cup all-purpose flour
- 2 flax eggs (for coating) (2 tablespoons ground flaxseed meal + 6 tablespoons water)
- Vegetable or canola oil for frying
Instructions:
- Prepare the Broccoli:
- Steam the broccoli florets until tender but still bright green. Drain and let cool slightly, then finely chop.
- Prepare the Broccoli Cheese Mixture:
- In a large bowl, combine the chopped broccoli, vegan shredded cheeses, diced vegan cheese pieces, red pepper flakes, and 1/4 cup Panko crumbs. Mix well.
