1 pound Italian sausage (mild or spicy, casings removed if using links)
1 tablespoon olive oil (if needed)
1 medium onion, diced
3 garlic cloves, minced
2 medium carrots, diced
2 celery stalks, diced
1 teaspoon dried Italian seasoning
½ teaspoon crushed red pepper flakes (optional, for heat)
4 cups chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese (plus extra for garnish)
2 cups chopped fresh spinach or kale
1 cup uncooked small pasta (such as ditalini, shells, or orzo)
Salt and black pepper to taste
Fresh parsley or basil for garnish (optional)
Instructions
Cook the Sausage:
Heat a large pot or Dutch oven over medium heat.
Add the Italian sausage and cook, breaking it into crumbles, until browned and cooked through (about 5-7 minutes)
If there’s excess grease, drain it; otherwise, leave it for flavor. Remove the sausage and set aside.


Sauté Vegetables:
In the same pot, add a little olive oil if needed.
Add the onion, carrots, and celery, and sauté for 5-7 minutes until softened.
