Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning (adjust to taste)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)
  • Cooked pasta or rice (optional, for serving)

Instructions:

  1. Season Chicken: Season the chicken breasts with Cajun seasoning, salt, and black pepper on both sides.
  2. Cook Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for 5-6 minutes on each side or until fully cooked and no longer pink in the center. Remove chicken from the skillet and set aside.
  3. Sauté Garlic and Tomatoes: In the same skillet, add minced garlic and halved cherry tomatoes. Sauté for 2-3 minutes until the tomatoes begin to soften.
  4. Deglaze Pan: Pour in the chicken broth, scraping the bottom of the skillet to deglaze and pick up any flavorful bits.
  5. Add Cream and Cheese: Reduce the heat to medium, then stir in the heavy cream and grated Parmesan cheese. Allow the sauce to simmer for 2-3 minutes until it thickens slightly.
  6. Return Chicken to the Pan: Return the cooked chicken breasts to the skillet, coating them with the creamy Cajun sauce. Simmer for an additional 3-4 minutes to heat the chicken through.
  7. Serve: Serve the Creamy Cajun Chicken over cooked pasta or rice, if desired. Garnish with chopped fresh parsley.

Notes:

  • Cajun Seasoning: Adjust the amount of Cajun seasoning to suit your spice preference. You can use store-bought Cajun seasoning or make your own by combining paprika, cayenne pepper, garlic powder, onion powder, thyme, and oregano.
  • Pasta or Rice: This dish pairs well with pasta or rice, but you can also serve it over cauliflower rice or steamed vegetables for a low-carb option.
  • Vegetable Variation: Feel free to add sautéed bell peppers, onions, or spinach for additional flavor and texture.
