Lightened-Up Cowboy Cookies

1 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 ¼ cups old-fashioned oats

½ cup unsweetened shredded coconut
½ cup chopped almonds (instead of pecans)
Instructions:

Preheat the oven to 350°F and line baking sheets with parchment paper.
In a large mixing bowl, beat the softened butter and brown sugar until well combined.
Add the egg and vanilla extract, beating until blended.

Incorporate the oats, whole wheat flour, and baking soda into the mixture, being careful not to over-mix.

Using a cookie scoop or spoon, drop 1 ½ tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart.
