Ingredients:
- 200 g chocolate (preferably dark chocolate for a richer taste)
- 140 g aquafaba (the liquid from a can of chickpeas)
- 30 g sugar (you can adjust according to your sweetness preference)
- 1 teaspoon lemon juice
Instructions:
- Prepare the chocolate:
- Break the chocolate into small pieces and melt it using a double boiler or in the microwave in short intervals, stirring frequently until smooth. Let it cool slightly.
- Whip the aquafaba:
- Pour the aquafaba into a large mixing bowl. Add the lemon juice (this helps to stabilize the foam).
- Using an electric mixer, whip the aquafaba on high speed until stiff peaks form. This can take around 5-10 minutes.
- Add the sugar:
- Gradually add the sugar to the whipped aquafaba while continuing to whip. This helps to incorporate air and stabilize the mousse.
- Combine chocolate and aquafaba:
- Gently fold the melted chocolate into the whipped aquafaba using a spatula. Do this in batches to maintain as much air as possible in the mixture.
- Chill the mousse:
- Once the chocolate is fully incorporated, divide the mousse into 6 serving dishes.
- Refrigerate for at least 2 hours or until set.
- Serve:
- Serve the mousse chilled. Optionally, garnish with fresh berries, mint leaves, or a dusting of cocoa powder.
