  • 30 g sugar (you can adjust according to your sweetness preference)
  • 1 teaspoon lemon juice

Instructions:

  1. Prepare the chocolate:
    • Break the chocolate into small pieces and melt it using a double boiler or in the microwave in short intervals, stirring frequently until smooth. Let it cool slightly.
  2. Whip the aquafaba:
    • Pour the aquafaba into a large mixing bowl. Add the lemon juice (this helps to stabilize the foam).
    • Using an electric mixer, whip the aquafaba on high speed until stiff peaks form. This can take around 5-10 minutes.
  3. Add the sugar:
    • Gradually add the sugar to the whipped aquafaba while continuing to whip. This helps to incorporate air and stabilize the mousse.
  4. Combine chocolate and aquafaba:
    • Gently fold the melted chocolate into the whipped aquafaba using a spatula. Do this in batches to maintain as much air as possible in the mixture.
  5. Chill the mousse:
    • Once the chocolate is fully incorporated, divide the mousse into 6 serving dishes.
    • Refrigerate for at least 2 hours or until set.
  6. Serve:
    • Serve the mousse chilled. Optionally, garnish with fresh berries, mint leaves, or a dusting of cocoa powder.
