Ingredients:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons butter
8 oz sliced mushrooms
2 cloves garlic, minced
2 cups fresh spinach
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
Salt and pepper to taste
Instructions:
Preheat your oven to 375°F (190°C).
Season the chicken breasts with salt and pepper on both sides.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, until browned. Remove the chicken from the skillet and set aside.
In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and minced garlic and cook for 3-4 minutes, until the mushrooms are tender.
Add the fresh spinach to the skillet and cook for 1-2 minutes, until wilted.
Add the grated Parmesan cheese and heavy cream to the skillet and stir everything together to combine. Season with salt and pepper to taste.
Transfer the chicken breasts to a baking dish. Pour the mushroom and spinach mixture over the chicken.
Bake the chicken in the preheated oven for 20-25 minutes, until the chicken is cooked through and the sauce is bubbly and golden brown.
Serve the chicken hot, garnished with extra Parmesan cheese and fresh herbs if desired.
