Chicken Kofta Kebab Stir Fry
Ingredients:
Chicken Kofta:
- 1 lb ground chicken
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground paprika
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1 egg
- 1 tablespoon olive oil (for frying)
Stir Fry:
- 2 tablespoons olive oil
- 1 bell pepper, sliced (any color)
- 1 small zucchini, sliced
- 1 small red onion, sliced
- 2 cups broccoli florets
- 2 garlic cloves, minced
- 1 tablespoon soy sauce (or coconut aminos for keto)
- 1 teaspoon ground black pepper
- Salt to taste
- Fresh parsley or cilantro for garnish
Instructions:
- Prepare the Chicken Kofta:
- In a large bowl, combine the ground chicken, parsley, cilantro, onion, garlic, cumin, coriander, paprika, black pepper, salt, and egg.
- Mix until well combined.
- Form the mixture into small oval-shaped patties or meatballs.
- Cook the Chicken Kofta:
- Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat.
- Add the chicken kofta and cook for about 4-5 minutes on each side until golden brown and cooked through.
- Remove the kofta from the skillet and set aside.
- Prepare the Stir Fry:
- In the same skillet, add 2 tablespoons of olive oil and heat over medium-high heat.
- Add the sliced bell pepper, zucchini, red onion, and broccoli florets.
- Stir fry for about 5-6 minutes until the vegetables are tender-crisp.
- Add the minced garlic and stir fry for another 1-2 minutes.
- Combine and Serve:
- Add the cooked chicken kofta back into the skillet with the vegetables.
- Pour in the soy sauce (or coconut aminos) and ground black pepper.
- Toss everything together and cook for another 2-3 minutes until heated through.
- Season with additional salt to taste if needed.
- Garnish with fresh parsley or cilantro before serving.
