Chicken Kofta Kebab Stir Fry

Ingredients:

Chicken Kofta:

  • 1 lb ground chicken
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 egg
  • 1 tablespoon olive oil (for frying)

Stir Fry:

  • 2 tablespoons olive oil
  • 1 bell pepper, sliced (any color)
  • 1 small zucchini, sliced
  • 1 small red onion, sliced
  • 2 cups broccoli florets
  • 2 garlic cloves, minced
  • 1 tablespoon soy sauce (or coconut aminos for keto)
  • 1 teaspoon ground black pepper
  • Salt to taste
  • Fresh parsley or cilantro for garnish

Instructions:

  1. Prepare the Chicken Kofta:
    • In a large bowl, combine the ground chicken, parsley, cilantro, onion, garlic, cumin, coriander, paprika, black pepper, salt, and egg.
    • Mix until well combined.
    • Form the mixture into small oval-shaped patties or meatballs.
  2. Cook the Chicken Kofta:
    • Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat.
