Chicken and Bacon Fried Rice

Ingredients:
2 cups cooked brown rice (cooled)
1 cup cooked chicken breast, diced
4 slices turkey bacon, diced
1 cup mixed vegetables (frozen or fresh), diced
2 cloves garlic, minced
2 tablespoons reduced-sodium soy sauce
1 tablespoon sesame oil
2 eggs, beaten
Salt and pepper to taste
Optional: chopped green onions for garnish
Instructions:
Heat a large non-stick skillet over medium heat. Add diced turkey bacon and cook until crispy. Remove bacon from the skillet and set aside.
In the same skillet, add minced garlic and mixed vegetables. Cook until vegetables are tender, about 5 minutes.
Push vegetables to one side of the skillet and add beaten eggs to the other side. Scramble the eggs until cooked through, then mix them with the vegetables.
Add diced chicken breast and cooked brown rice to the skillet. Stir well to combine.
Pour in reduced-sodium soy sauce and sesame oil. Stir to coat the rice mixture evenly. Cook for an additional 5 minutes, allowing the flavors to meld together.
Season with salt and pepper to taste. Sprinkle the cooked turkey bacon on top.
Serve hot, garnished with chopped green onions if desired.
