Cheesy Broccoli, Sausage, and Cauliflower Casserole
1 lb Broccoli florets
1/2 lb Cauliflower florets
1 tbsp olive oil
1 small yellow onion, finely diced
3 cloves garlic, minced
12 oz smoked sausage, sliced into 1-inch rounds
8oz cream cheese softened
1/2 cup mayo, plain yogurt or sour cream
2 cups shredded Mexican blend cheese
2 tbsp Dijon mustard
salt and pepper to taste
Preheat oven to 400.


Lightly grease a 9×13 baking dish and set aside.
Add water to a large pot, fill about halfway and bring to a boil.
Add Broccoli and Cauliflower, bring to a boil and cook 3 min. Drain well and set aside.
In the meantime, add oil to a skillet and heat over medium-high heat.
Stir in onions and cook for 2 min.
Add garlic and cook for 20 sec.
Stir in smoked sausage and cook for 3 min or until browned on all sides.
Transfer Broccoli, Cauliflower and sausage to baking dish.
In a mixing bowl combine cream cheese, mayo, 1 cup shredded cheese, Dijon mustard, salt and pepper, mix until thoroughly combined.
Stir cream cheese mixture into the Broccoli mix until everything is well combined. Add remaining cheese on top.
Bake 12-15 min until cheese is melted and top is golden brown.
