Low Point Cheesy Asparagus Casserole

Ingredients:

  • 1 lb (450g) asparagus, trimmed and cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup low-fat cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded reduced-fat cheddar cheese
  • 1/4 cup plain Greek yogurt
  • 1/4 teaspoon salt

  • Cooking spray

Instructions:

  1. Preheat your oven to 375°F (190°C) and lightly grease a casserole dish with cooking spray.
