Low Point Cheesy Asparagus Casserole
Ingredients:
- 1 lb (450g) asparagus, trimmed and cut into bite-sized pieces
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup low-fat cottage cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup shredded reduced-fat cheddar cheese
- 1/4 cup plain Greek yogurt
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions:
- Preheat your oven to 375°F (190°C) and lightly grease a casserole dish with cooking spray.
- Heat the olive oil in a skillet over medium heat. Add the minced garlic and chopped onion, and sauté until softened, about 3-4 minutes.
- Add the asparagus to the skillet and cook for an additional 4-5 minutes, or until it is tender-crisp. Remove from heat.
- In a mixing bowl, combine the low-fat cottage cheese, grated Parmesan cheese, shredded reduced-fat cheddar cheese, plain Greek yogurt, salt, and black pepper. Mix until well combined.

- Bake in the preheated oven for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
