Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup red onions, finely chopped
- 1/4 cup celery, finely chopped
- 1/4 cup carrots, finely chopped
- 1 clove garlic, minced
- 1 tbsp fresh dill, chopped
- 1 tbsp apple cider vinegar
- 1/4 cup Veganaise (vegan mayonnaise)
- 2-3 tbsp Frank’s Red Hot sauce (adjust to taste)
- Salt and pepper to taste
- Lettuce leaves
- Tomato slices
- Bread or sandwich rolls
Instructions:
- Prepare the Chickpea Mixture:
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly broken down but still a bit chunky.
- Add the chopped red onions, celery, carrots, minced garlic, and fresh dill to the bowl.
- Make the Dressing:
- In a small bowl, mix together the apple cider vinegar, Veganaise, and Frank’s Red Hot sauce until well combined.
- Pour the dressing over the chickpea mixture and stir until everything is evenly coated.
- Season with salt and pepper to taste.
- Assemble the Sandwich:
- Lay out your bread or sandwich rolls.
- Place a leaf of lettuce on the bottom half of each sandwich.
- Spoon the buffalo chickpea mixture over the lettuce.
- Top with slices of tomato.
- Close the sandwich with the top half of the bread or roll.
- Serve:
- Serve immediately, or wrap the sandwiches and refrigerate until ready to eat.
