Instructions:

  1. Prepare the Chickpea Mixture:
    1. In a large bowl, mash the chickpeas with a fork or potato masher until mostly broken down but still a bit chunky.
    2. Add the chopped red onions, celery, carrots, minced garlic, and fresh dill to the bowl.
  2. Make the Dressing:
    1. In a small bowl, mix together the apple cider vinegar, Veganaise, and Frank’s Red Hot sauce until well combined.
    2. Pour the dressing over the chickpea mixture and stir until everything is evenly coated.
    3. Season with salt and pepper to taste.
  3. Assemble the Sandwich:
    1. Lay out your bread or sandwich rolls.
    2. Place a leaf of lettuce on the bottom half of each sandwich.
    3. Spoon the buffalo chickpea mixture over the lettuce.
    4. Top with slices of tomato.
    5. Close the sandwich with the top half of the bread or roll.
  4. Serve:
    1. Serve immediately, or wrap the sandwiches and refrigerate until ready to eat.
