Ingredients:
- Vegetables & Noodles:
- 1 medium red onion, thinly sliced
- 1 cup shiitake mushrooms, sliced
- 1 cup crimini mushrooms, sliced
- 1 cup broccolini, chopped
- 1 cup cherry tomatoes, diced
- 8 oz (about 225g) rice noodles
- Sauce:
- 1 tsp sesame oil
- 1 tbsp hoisin sauce
- 1 tsp maple syrup
- 1 tbsp tamari sauce (or soy sauce)
- 1 tbsp lemon juice
- Garnishes:
- 1 tbsp sesame seeds
- 2 tbsp fresh cilantro, chopped
- 2 green onions, chopped
Instructions:
- Prepare the Noodles:
- Boil a pot of water and cook the rice noodles according to the package instructions. Drain and set aside.
- Cook the Vegetables:
- Heat a large skillet over medium-high heat.
- Add the sliced red onions and sauté until they start to soften.
- Add the sliced shiitake and crimini mushrooms, and cook until they are browned and tender.
- Add the chopped broccolini and diced cherry tomatoes, and cook until the broccolini is bright green and tender.
- Prepare the Sauce:
- In a jar or small bowl, mix together the sesame oil, hoisin sauce, maple syrup, tamari sauce, and lemon juice. Shake or stir well to combine.
- Combine and Serve:
- Add the cooked rice noodles to the skillet with the vegetables.
- Pour the sauce over the noodles and vegetables, and toss everything together until well coated and heated through.
- Serve hot, garnished with sesame seeds, fresh cilantro, and green onions.
