Ingredients:

  • Vegetables & Noodles:
    • 1 medium red onion, thinly sliced
    • 1 cup shiitake mushrooms, sliced
    • 1 cup crimini mushrooms, sliced
    • 1 cup broccolini, chopped
    • 1 cup cherry tomatoes, diced
    • 8 oz (about 225g) rice noodles
  • Sauce:
    • 1 tsp sesame oil
    • 1 tbsp hoisin sauce
    • 1 tsp maple syrup
    • 1 tbsp tamari sauce (or soy sauce)
    • 1 tbsp lemon juice
  • Garnishes:
    • 1 tbsp sesame seeds
    • 2 tbsp fresh cilantro, chopped
    • 2 green onions, chopped

Instructions:

  1. Prepare the Noodles:
    • Boil a pot of water and cook the rice noodles according to the package instructions. Drain and set aside.
  2. Cook the Vegetables:
    • Heat a large skillet over medium-high heat.
    • Add the sliced red onions and sauté until they start to soften.
    • Add the sliced shiitake and crimini mushrooms, and cook until they are browned and tender.
    • Add the chopped broccolini and diced cherry tomatoes, and cook until the broccolini is bright green and tender.
  3. Prepare the Sauce:
    • In a jar or small bowl, mix together the sesame oil, hoisin sauce, maple syrup, tamari sauce, and lemon juice. Shake or stir well to combine.
  4. Combine and Serve:
    • Add the cooked rice noodles to the skillet with the vegetables.
    • Pour the sauce over the noodles and vegetables, and toss everything together until well coated and heated through.
    • Serve hot, garnished with sesame seeds, fresh cilantro, and green onions.
