Preparation Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Ingredients:

  • 3 Zucchini
  • 2 Eggs
  • 1 cup Breadcrumbs
  • 1/2 cup Parmesan cheese
  • A handful of parsley
  • Salt & Pepper to taste

Instructions:

  1. Prepare the Breadcrumb Mixture:
    • In a bowl, combine breadcrumbs, grated Parmesan cheese, chopped parsley, and a pinch of salt and black pepper. Mix the ingredients thoroughly to ensure even distribution of flavors.
  2. Beat the Eggs:
    • In a separate bowl, beat the eggs until well combined. Set aside the eggs and breadcrumb mixture for breading the zucchini sticks.
  3. Prepare the Zucchini:
    • Wash the zucchini under cold water and trim off the ends. Cut each zucchini in half vertically, then slice each half lengthwise into sticks, about the size of thick fries. Pat the zucchini sticks dry with paper towels to remove excess moisture.
  4. Breading Process:
    • Dip each zucchini stick first into the beaten eggs, ensuring it is evenly coated.
    • Next, roll the egg-coated zucchini stick in the breadcrumb mixture, pressing gently to adhere the breadcrumbs to the surface. Repeat this process for all the zucchini sticks.
  5. Frying the Zucchini:
    • In a high-sided frying pan, heat a generous amount of oil over medium-high heat until hot but not smoking.
    • Carefully place the breaded zucchini sticks in the hot oil, making sure they do not touch each other. Fry the zucchini sticks in batches, if necessary, to avoid overcrowding the pan.
    • Fry the zucchini sticks until they are golden brown and crispy on all sides, turning them occasionally for even cooking. This usually takes about 2-3 minutes per side.
  6. Drain and Serve:
    • Once the zucchini sticks are cooked to perfection, carefully transfer them to a tray lined with paper towels to drain any excess oil.
    • Serve the hot and crispy Breaded Zucchini Sticks immediately, either on their own or with your favorite dipping sauce.

Conclusion: With its simple preparation and mouthwatering taste, Breaded Zucchini Sticks are a versatile appetizer that is sure to impress friends and family alike. Whether you’re hosting a gathering or simply looking for a tasty snack, these crispy delights are the perfect choice.
