Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tbsp fresh cilantro, chopped (optional for garnish)
  • 1/2 cup salsa verde
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 6 corn tortillas
  • 1/2 cup vegan cheese of choice

Instructions

  1. Prepare the Black Bean Mixture:
    • In a medium-sized pot, combine the drained and rinsed black beans, cumin, salsa verde, onion powder, and garlic powder.
    • Stir well to combine all the ingredients.
    • Let the mixture simmer on low heat for about 10-15 minutes, stirring occasionally, until the beans are heated through and the flavors are well combined.
  2. Assemble the Tacos:
    • Heat a non-stick skillet over medium heat.
    • Lightly pan-fry the corn tortillas for about 1-2 minutes on each side until they are warm and slightly crispy.
    • Spoon a portion of the black bean mixture onto each tortilla.
    • Sprinkle vegan cheese over the top.
    • If desired, garnish with fresh cilantro.
  3. Serve:
    • Serve the tacos warm, and enjoy!
