- 1 can (15 oz) black beans, drained and rinsed
- 1 tsp cumin
- 1 tbsp fresh cilantro, chopped (optional for garnish)
- 1/2 cup salsa verde
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 6 corn tortillas
- 1/2 cup vegan cheese of choice
Instructions
- Prepare the Black Bean Mixture:
- In a medium-sized pot, combine the drained and rinsed black beans, cumin, salsa verde, onion powder, and garlic powder.
- Stir well to combine all the ingredients.
- Let the mixture simmer on low heat for about 10-15 minutes, stirring occasionally, until the beans are heated through and the flavors are well combined.
- Assemble the Tacos:
- Heat a non-stick skillet over medium heat.
- Lightly pan-fry the corn tortillas for about 1-2 minutes on each side until they are warm and slightly crispy.
- Spoon a portion of the black bean mixture onto each tortilla.
- Sprinkle vegan cheese over the top.
- If desired, garnish with fresh cilantro.
