Ingredients:

4 large zucchini
15 oz ricotta cheese
1/4 cup Parmesan cheese, grated
1 1/2 cups mozzarella cheese, shredded (divided)
1 large egg
2 cups marinara sauce (homemade or store-bought)
Salt & pepper to taste
1 tablespoon olive oil
Instructions:

Preheat Air Fryer:
Preheat your air fryer to 400°F (200°C).
Prepare Zucchini:
Slice the zucchini into thin, 1/8-inch thick slices.
Toss the zucchini slices with 1 tablespoon of olive oil.
Arrange the zucchini slices in the air fryer basket in a single layer.
Air fry for 5-7 minutes until they are slightly tender. You may need to do this in batches.
Prepare Filling:
While the zucchini is air frying, in a bowl, mix together ricotta cheese, grated Parmesan cheese, 1/2 cup of shredded mozzarella cheese, 1 egg, and salt & pepper to taste. Stir the mixture until well combined.
Assemble Roll-Ups:
Lay a zucchini strip on a flat surface and spread about 2 tablespoons of the ricotta mixture over each individual zucchini strip.
Top each strip with a tablespoon of marinara sauce and a sprinkle of mozzarella cheese.
Roll up the zucchini strip and place it in the air fryer basket.
Repeat this process with the remaining zucchini strips.
Air Fry:
Air fry the zucchini rolls at 400°F for 8-10 minutes or until the cheese is melted and bubbly, and the edges are golden.
Serve:
Once done, remove from the air fryer and let it cool slightly before serving.
