Air Fryer Soft Lemon Cookies

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 tbsp lemon juice
  • 2 tsp grated lemon zest
  • 1 tsp vanilla extract
  • Powdered sugar, for dusting

Instructions:

  1. Prepare Dough:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    • In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3 minutes.
    • Add the eggs one at a time, beating well after each addition.
    • Mix in the lemon juice, lemon zest, and vanilla extract until well combined.
    • Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
  2. Preheat Air Fryer:
    • Preheat your Air Fryer to 320°F (160°C) for about 5 minutes.
  3. Shape Cookies:
    • Using a tablespoon or cookie scoop, drop rounded balls of dough onto a piece of parchment paper or a silicone mat. Flatten each ball slightly to form cookie shapes that fit in your Air Fryer basket.
  4. Cook Cookies:
    • Place a few cookies in the Air Fryer basket, making sure they are not touching. Depending on the size of your Air Fryer, you may need to work in batches.
    • Air fry at 320°F (160°C) for 6-8 minutes, or until the edges are lightly golden. The cookies should be soft in the center.
  5. Cool and Dust:
    • Allow the cookies to cool in the Air Fryer basket for 5 minutes before transferring them to a wire rack to cool completely.
    • Dust with powdered sugar before serving.

Enjoy your soft, lemony cookies!
