Air Fryer Shortbread Cookies — Shortbread cookies are one of the most classic holiday desserts. They go well with hot cocoa to coffee and can be decorated in many different ways for any occasion. The following recipe makes about three dozen delicious shortbreads that you can decorate for Christmas or other winter holidays!

Ingredients
1/2 cup butter, unsalted, room temperature
1/2 cup shortening
2 cups granulated sugar
1 teaspoon baking sodsa
1 teaspoon cream of tartar
1/2 teaspoon salt
3 large egg yolks
1 teaspoon pure vanilla extract
1 3/4 cup all-purpose flour
Instructions
Following the manufacturer’s instructions, preheat your air fryer to 350 degrees F, air fryer setting. Prepare a few pieces of parchment paper to fit your air fryer basket or tray, set aside. When the air fryer is preheated, and spray with cooking spray.
A hand-held electric mixer or a stand mixer beat butter and shortening until creamy and well-combined for at least 30 seconds.
Then add the sugar, baking soda, cream to tartar, and salt, continue to beat, ensuring you scrape down the side, so the bowl is as necessary. Add the egg yolks and vanilla.
Add the flour, ensuring you’re still scraping down the sides of the mixing bowl. Once the flour has been well incorporated into the dough mixture, shape dough into 2-inch balls and flatten to 1/2 inch thickness.
Place each flatted piece of dough onto the parchment paper in the air fryer basket, about 1/2 to 3/4 inches apart—Cook for 6 minutes, or until the cookies turn a deep golden brown.
