Air Fryer Loaded Steak Quesadillas

Ingredients:

For the Steak:

  • 3/4 – 1 lb sirloin steak
  • 1 teaspoon ancho chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground Mexican oregano
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Pinch of cayenne pepper
  • 1/4 teaspoon salt

For the Quesadillas:

  • 4 large flour tortillas
  • 2 cups Mexican Cheese Blend
  • 1/2 cup cherry tomatoes, thinly sliced
  • 1/2 cup canned fire-roasted corn kernels, drained
  • 1/2 cup canned black beans, drained
  • 1/2 an avocado, diced
  • Lime wedges and fresh minced cilantro for garnish
  • Olive oil spray (for air frying)

Instructions:

  1. Prepare the Steak:
    • In a small bowl, mix together all the spices and salt for the steak.
    • Generously coat the steak with the spice blend.
    • Preheat a skillet over medium-high heat and add 2 tablespoons of olive oil.
    • Sear the steak for no more than 2-3 minutes per side. The steak should be seared but not fully cooked as it will finish cooking in the air fryer.
    • Remove the steak from the skillet and let it rest for 5 minutes. Then, thinly slice the steak against the grain.
  2. Assemble the Quesadillas:
    • Lay out two tortillas and sprinkle each with 1/2 cup of the Mexican cheese blend.
    • Top with sliced cherry tomatoes, fire-roasted corn, black beans, diced avocado, and slices of steak.
    • Sprinkle the remaining cheese evenly over the toppings and cover each with another tortilla.
  3. Air Fry the Quesadillas:
    • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
    • Lightly spray the top of the quesadillas with olive oil.
    • Carefully place the assembled quesadillas in the air fryer basket. Depending on the size of your air fryer, you may need to cook one at a time.
    • Air fry the quesadillas for 5-7 minutes, flipping halfway through, until the tortillas are golden brown and the cheese is fully melted.
  4. Serve:
    • Once done, remove the quesadillas from the air fryer and let them cool for a minute.
    • Slice into quarters or halves as desired.
    • Garnish with fresh minced cilantro and serve with lime wedges, sour cream, salsa, and guacamole.
