Air Fryer Chicken Egg Rolls
Ingredients
- 1/2 lb ground chicken breast – 0 points
- 1 cup coleslaw mix (shredded cabbage and carrots) – 0 points
- 1/4 cup diced onion – 0 points
- 1 clove garlic, minced – 0 points
- 1 tbsp low-sodium soy sauce – 0 points
- 1/2 tsp ground ginger – 0 points
- Salt and pepper, to taste – 0 points
- 4 egg roll wrappers (can find these in the refrigerated section) – approximately 1 point each
Directions
- Cook the Filling: In a skillet over medium heat, cook the ground chicken until browned, breaking it into small pieces as it cooks. Add the diced onion, garlic, coleslaw mix, soy sauce, ground ginger, salt, and pepper. Cook until vegetables are softened and flavors are well combined. Set aside to cool slightly.
- Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner facing you (like a diamond). Spoon a small amount of the filling into the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll up tightly, sealing the edges with a little water to hold the roll together.
- Air Fry: Preheat your air fryer to 400°F (200°C). Lightly spray the egg rolls with cooking spray and place them in the air fryer basket in a single layer. Air fry for 6–8 minutes, turning halfway through, until they are golden and crispy.
- Serve and Enjoy: Let the egg rolls cool slightly before serving. Enjoy with a low-point dipping sauce, like soy sauce or a touch of sriracha.
Tips
- Make It Spicy: Add a dash of sriracha or hot sauce to the filling if you like a little heat.
- Storage: These egg rolls can be refrigerated for 1–2 days and reheated in the air fryer to keep them crispy.
Benefits
These egg rolls are high in protein, low in fat, and packed with flavor. Using an air fryer reduces the need for oil, keeping them light and crispy.
