Air Fryer Chicken and Pineapple Rice Recipe


Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce

Instructions

  1. Prep the Chicken:
    • In a large mixing bowl, toss the cubed chicken with salt and pepper.
  2. Air Fry the Chicken:
    • Preheat your air fryer to 380°F (193°C).
    • Place the seasoned chicken in the air fryer basket in a single layer.
    • Air fry for 12-15 minutes or until golden brown and cooked through, shaking the basket halfway through for even cooking.
  3. Cook the Vegetables:
    • In a skillet over medium heat, add olive oil.
    • Sauté the chopped onion, minced garlic, and diced red bell pepper until softened, about 5-7 minutes.
  4. Add Pineapple:
    • Stir in the cubed pineapple and cook for an additional 2 minutes.
  5. Prepare the Rice:
    • In the same skillet, add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper.
    • Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is cooked.
  6. Combine and Serve:
    • Once the rice is done, return the air-fried chicken to the skillet, mixing everything well.
    • Serve garnished with sliced green onions and sesame seeds.
