Ingredients:

Almond Flour: 110g (1 cup)
Unsweetened Almond Milk: 60ml (1/4 cup)
Coconut Oil: 30ml (2 tbsp)
A Pinch of Salt
Cauliflower Rice: 200g (2 cups)
Shredded Cheese: 120g (1 cup)
Instructions:

In a large mixing bowl, combine the almond flour with a pinch of salt.
Pour in coconut oil and unsweetened almond milk.
Knead until a smooth dough forms, then cover it and set it aside for 15-20 minutes.
Microwave the cauliflower rice for about 5 minutes, then squeeze out the excess moisture using a cheesecloth or a paper towel.
Roll out the dough into a disk.
Place two-thirds of the cheese on top.
Add the cauliflower rice and more cheese.
Pinch the edges of the dough together to close the filling.
Flatten the flatbread with a rolling pin.
Preheat the air fryer to 375°F (190°C).
Place the flatbread in the air fryer basket.
Air fry for 12-15 minutes, flipping halfway through, until golden brown and cooked through.
Slice and serve.
