Air Fryer Broccoli Cheese Stuffed Chicken Breast

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 2 cups chopped cooked broccoli florets
  • 1 tablespoon olive oil
  • 1/2 minced red or green bell pepper
  • 2 minced garlic cloves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Prepare the Chicken:
    • Cut a pocket in each chicken breast, being careful not to cut all the way through.
    • Season the chicken on both sides with salt, pepper, Italian seasoning, and paprika.
  2. Prepare the Stuffing:
    • In a bowl, toss the cooked broccoli florets with minced bell pepper, shredded cheddar, shredded parmesan, minced garlic, and additional salt and pepper to taste.
  3. Stuff the Chicken:
    • Stuff each chicken breast with the prepared cheesy broccoli mixture, ensuring that the filling is evenly distributed.
  4. Air Fry the Chicken:
    • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
    • Brush or spray the outside of the chicken breasts with a little olive oil.
    • Place the stuffed chicken breasts in the air fryer basket in a single layer. Depending on the size of your air fryer, you may need to cook in batches.
    • Cook for 18-22 minutes, flipping halfway through, until the chicken is fully cooked and the internal temperature reaches 165°F (75°C).
    • If the top is browning too quickly, you can cover the chicken loosely with aluminum foil during the cooking process.
  5. Serve:
    • Let the chicken rest for a few minutes after cooking.
    • Serve hot with your favorite side dishes.
