π±π Vegan Lemon Garlic Chickpea Cakes
These chickpea cakes are crispy and golden on the outside, soft and flavorful inside, with fresh lemon, garlic, parsley, and warm spices. This version is completely vegan and egg-free.
π Ingredients
Makes about 8β10 cakes
- 1 can (15 oz / 425 g) chickpeas, drained and rinsed
- 2 tbsp chickpea flour
- 2β3 garlic cloves, finely minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 2 tbsp fresh parsley, finely chopped
- 1 tsp ground cumin
- Β½ tsp paprika
- Β½ tsp salt
- ΒΌ tsp black pepper
- 1β2 tbsp olive oil, for cooking
- 1β2 tbsp water, only if needed
- Optional: ΒΌ tsp chili flakes

- Prepare the chickpeas: Drain and rinse them, then pat them dry.
- Add the chickpeas to a large bowl and mash with a fork or potato masher. Don’t make them completely smoothβleave some small pieces for a better texture.
- Add the garlic, lemon juice, lemon zest, parsley, cumin, paprika, salt, and black pepper.
- Add the chickpea flour and mix everything together until you have a thick mixture that holds together when pressed.
- If the mixture seems too dry, add 1 tablespoon water at a time. If it’s too soft, add another small spoonful of chickpea flour.
- Divide the mixture into 8β10 portions and shape each into a small, firm patty.
- For easier cooking, refrigerate the patties for 10β15 minutes. This helps them hold their shape.
- Heat olive oil in a non-stick skillet over medium heat.
- Place the cakes in the pan without overcrowding. Cook for 3β4 minutes per side, until golden brown and crispy.
- Transfer to a plate and serve immediately with fresh lemon wedges.
π Easy Lemon-Herb Dip
Mix together:
- Β½ cup unsweetened vegan yogurt
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tbsp chopped parsley
- 1 small garlic clove, finely grated
- Pinch of salt
Serve the warm chickpea cakes with the dip, a fresh salad, or roasted vegetables. A tahini sauce also works beautifully.

For a lower-oil option, place the cakes on a parchment-lined baking sheet, lightly brush/spray with olive oil, and bake at 400Β°F (200Β°C) for about 20β25 minutes, flipping halfway through.
