- 1 small garlic clove, finely grated
- Β½ tsp dried oregano
- Β½ tsp Italian seasoning
- ΒΌ tsp salt
- ΒΌ tsp black pepper
- 1 tsp finely grated lemon zest
π©βπ³ Step-by-Step Instructions
1. Make the zesty dressing
In a small bowl or jar, combine:
- olive oil
- lemon juice
- red wine vinegar
- Dijon mustard
- honey
- garlic
- oregano
- Italian seasoning
- salt
- pepper
- lemon zest
Whisk vigorously for 30β45 seconds until emulsified.
Taste it.
You want a balance of:
bright lemon + tangy vinegar + a little sweetness + garlic + herbs.
If it’s too tart, add another Β½ teaspoon honey.
If it’s too mild, add another teaspoon lemon juice.
Set aside.
2. Cook the tortellini
Bring a large pot of salted water to a boil.
Cook the tortellini according to the package directions, usually around 2β5 minutes for refrigerated tortellini.
Don’t overcook it.
You want the tortellini tender but still slightly firm.
Drain immediately.
Important trick
Rinse the tortellini briefly under cold water.
This stops the cooking process and cools it down for the salad.
Drain very well.
Toss with about 1 teaspoon olive oil to prevent sticking.
3. Season the shrimp
Pat the shrimp very dry with paper towels.
Place them in a bowl and add:
- 1 tbsp olive oil
- minced garlic
- paprika
- Italian seasoning
- salt
- pepper
- red pepper flakes
Toss until evenly coated.
4. Cook the shrimp
Heat a large skillet over medium-high heat.
Add the shrimp in a single layer.
Cook for approximately 1Β½β2 minutes on the first side.
Flip.
Cook another 1β2 minutes.
The shrimp should become:
- pink and opaque
- lightly golden around the edges
- just cooked through
Remove from the heat immediately.
Overcooked shrimp become rubbery very quickly.
Drizzle the shrimp with 1 tbsp fresh lemon juice while they’re still warm.
Allow them to cool for several minutes.
5. Prepare the vegetables
While the shrimp cools, prepare:
- halved cherry tomatoes
- diced cucumber
- diced bell pepper
- thinly sliced red onion
- small broccoli florets
- parsley
- basil
For extra-crisp broccoli
Blanch the broccoli in boiling water for 60β90 seconds, then immediately transfer it to ice water.
Drain thoroughly.
This keeps it bright green while maintaining a nice crunch.
You can also use it completely raw.
6. Assemble the salad
Add the cooled tortellini to a large serving bowl.
Add:
- shrimp
- tomatoes
- cucumber
- bell pepper
- red onion
- broccoli
- parsley
- basil
- olives, if using
Pour approximately β of the dressing over everything.
Gently toss.
Be careful not to break the tortellini.
7. Let the flavors develop
Cover and refrigerate for 20β30 minutes.
This short resting time allows the tortellini to absorb the dressing and the herbs and vegetables to blend their flavors.
Before serving, add the remaining dressing as needed.
π Final Finishing Touches
Right before serving, add:
- extra fresh lemon zest
- chopped parsley
- freshly ground black pepper
- a little Parmesan, if desired
For an especially fresh flavor, squeeze another Β½ lemon over the finished salad.
β Secrets to the Best Tortellini & Shrimp Salad
Don’t overcook the tortellini
Slightly firm tortellini holds together much better in a salad.
Dry everything well
Excess water from the vegetables or tortellini dilutes the dressing.
Don’t overcook the shrimp
As soon as they’re opaque and curled into a loose C shape, they’re generally done.
Dress while the tortellini is cool but not ice-cold
It absorbs the dressing nicely without becoming greasy.
Add delicate herbs at the end
Fresh basil and parsley taste much brighter when they’re not sitting in dressing for hours.
πΆοΈ Optional Spicy Version
Add to the shrimp:
- Β½ tsp Cajun seasoning
- ΒΌ tsp cayenne
- extra red pepper flakes
And add 1 tbsp chopped jalapeΓ±o to the salad.
The spicy shrimp + lemon dressing combination is excellent.
π§ Mediterranean Version
Add:
- Β½ cup crumbled feta
- Kalamata olives
- roasted red peppers
- artichoke hearts
Replace the basil with additional parsley and oregano.
π₯ Creamy Version
For a creamy dressing, mix:
- β cup Greek yogurt
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon
- 1 small grated garlic clove
- Β½ tsp oregano
- salt and pepper
Whisk until smooth and thin with 1β2 tablespoons water if needed.
π½οΈ Serving
Serve chilled or slightly cool, with warm garlic bread or a simple green salad.
For the best texture, take it out of the refrigerator about 10 minutes before serving and toss it once more with a little dressing.
Best flavor combination: cheesy tortellini + garlic-lemon shrimp + crunchy cucumber and peppers + juicy tomatoes + fresh herbs + bright lemon dressing.
