Ingredients

  • 2 medium zucchini, grated and squeezed dry
  • 1 cup low-fat cottage cheese
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 cup almond flour
  • 1 scoop (30g) unflavored whey protein powder
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

High-Protein Greek Yogurt Dip

  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • 1 garlic clove, grated
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Squeeze all excess water from the zucchini.
  3. Mix zucchini, cottage cheese, Parmesan, eggs, almond flour, protein powder, garlic, parsley, oregano, salt, and pepper in a bowl.
  4. Scoop heaping tablespoons onto a parchment-lined baking sheet.
  5. Bake for 20–25 minutes until golden brown and crisp.
  6. Serve with the Greek yogurt dip.
