Ingredients
- 2 medium zucchini, grated and squeezed dry
- 1 cup low-fat cottage cheese
- 1 cup grated Parmesan cheese
- 2 large eggs
- 1/2 cup almond flour
- 1 scoop (30g) unflavored whey protein powder
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 tsp black pepper
High-Protein Greek Yogurt Dip
- 1 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp fresh dill, chopped
- 1 garlic clove, grated
- Pinch of salt
Instructions
- Preheat oven to 400°F (200°C).
- Squeeze all excess water from the zucchini.
- Mix zucchini, cottage cheese, Parmesan, eggs, almond flour, protein powder, garlic, parsley, oregano, salt, and pepper in a bowl.
- Scoop heaping tablespoons onto a parchment-lined baking sheet.
- Bake for 20–25 minutes until golden brown and crisp.
- Serve with the Greek yogurt dip.
