For the Cake Base
- 1 ½ cups (190g) all-purpose flour
- ½ cup (100g) fine semolina (adds a lovely Mediterranean texture)

- ½ tsp fine sea salt
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- Zest of 1 large lemon or orange
Wet Ingredients

- ¾ cup (150g) granulated sugar
- ¼ cup (60ml) honey (preferably thyme or orange blossom honey)
- 3 large eggs, at room temperature
- 1 tsp pure vanilla extract
- ¼ cup (60ml) plain Greek yogurt or milk
For the Apple Filling
- 4–5 medium apples (Granny Smith, Honeycrisp, or Golden Delicious)
- 2 tbsp unsalted butter (or olive oil for dairy-free option)
- ½ cup (100g) brown sugar
- 2 tbsp honey
- 1 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 tbsp cornstarch or flour (to thicken the filling)
- A pinch of salt

- 1 tbsp warm honey or apricot jam for a glossy finish

Step 1: Prepare the Apple Filling
- Peel, core, and chop the apples into bite-sized chunks.
- In a large skillet over medium heat, melt the butter (or warm olive oil).
- Add the apples, brown sugar, honey, cinnamon, lemon juice, and salt. Stir gently.
- Cook for 6–8 minutes, until the apples soften slightly and release their juices.
- Stir in the cornstarch or flour and cook for another 1–2 minutes until the mixture thickens and turns glossy.
- Remove from heat and let cool slightly.
Step 2: Make the Cake Batter
- Preheat the oven to 350°F (175°C). Grease a 9-inch round or square baking pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the dry ingredients: flour, semolina, baking powder, baking soda, salt, cinnamon, nutmeg, and zest.
- In a large mixing bowl, whisk the olive oil, sugar, and honey until smooth and slightly pale.
- Add the eggs one at a time, whisking well after each addition.
- Mix in the vanilla and Greek yogurt (or milk).

Step 3: Assemble the Cake
