🍎 Ingredients

For the Cake Base

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (100g) fine semolina (adds a lovely Mediterranean texture)
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp fine sea salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Zest of 1 large lemon or orange

Wet Ingredients

For the Apple Filling

  • 4–5 medium apples (Granny Smith, Honeycrisp, or Golden Delicious)
  • 2 tbsp unsalted butter (or olive oil for dairy-free option)
  • ½ cup (100g) brown sugar
  • 2 tbsp honey
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch or flour (to thicken the filling)
  • A pinch of salt

For Brushing (Optional)

  • 1 tbsp warm honey or apricot jam for a glossy finish

Step 1: Prepare the Apple Filling

  1. Peel, core, and chop the apples into bite-sized chunks.
  2. In a large skillet over medium heat, melt the butter (or warm olive oil).
  3. Add the apples, brown sugar, honey, cinnamon, lemon juice, and salt. Stir gently.
  4. Cook for 6–8 minutes, until the apples soften slightly and release their juices.
  5. Stir in the cornstarch or flour and cook for another 1–2 minutes until the mixture thickens and turns glossy.
  6. Remove from heat and let cool slightly.

Step 2: Make the Cake Batter

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round or square baking pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together the dry ingredients: flour, semolina, baking powder, baking soda, salt, cinnamon, nutmeg, and zest.
  3. In a large mixing bowl, whisk the olive oil, sugar, and honey until smooth and slightly pale.
  4. Add the eggs one at a time, whisking well after each addition.
  5. Mix in the vanilla and Greek yogurt (or milk).

Step 3: Assemble the Cake

  4. Use a spatula to gently smooth the top.

Step 4: Bake

  1. Bake for 40–50 minutes, or until the top is deep golden brown and a skewer inserted in the center comes out mostly clean (a little apple moisture is okay).
