🥐 Mediterranean Spinach and Cheese Puff Pastry Squares

Ingredients:

  • 1 sheet puff pastry, thawed (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 5 oz (about 150 g) fresh spinach (or thawed frozen spinach, well drained)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup ricotta or cream cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg, lightly beaten (for filling)
  • 1 tsp dried oregano (or fresh chopped herbs like dill or parsley)
  • 1/4 tsp black pepper
  • Pinch of nutmeg (optional, for depth)
  • 1 egg yolk + 1 tbsp water (for egg wash)
  • Sesame seeds or nigella seeds (optional, for topping)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare filling – Heat olive oil in a pan, sauté onion until soft, add garlic, then spinach. Cook until wilted and most moisture evaporates. Remove from heat, cool slightly.
  3. Mix filling – In a bowl, combine spinach mixture with feta, ricotta (or cream cheese), Parmesan, egg, oregano, pepper, and nutmeg. Stir well.
  4. Cut pastry – Roll out puff pastry and cut into 9–12 equal squares.
  5. Assemble – Place 1–2 tbsp of filling in the center of each square. Fold corners slightly inward (or leave open for a rustic look).
  6. Finish – Brush edges with egg wash. Sprinkle with sesame or nigella seeds if desired.
  7. Bake – 15–20 minutes until puffed and golden brown.
