🔹 For the Cake:

  • 1 cup white whole wheat flour – 11 points
  • 1/2 cup unsweetened applesauce – 0 points
  • 1/2 cup unsweetened almond milk – 0 points
  • 1/4 cup light butter or light margarine – 5 points
  • 1/3 cup cocoa powder (unsweetened) – 3 points
  • 1/2 cup granular monk fruit or erythritol sweetener – 0 points
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

🔹 For the Icing:

  • 1/4 cup powdered monk fruit or sugar substitute – 0 points
  • 2 tbsp unsweetened cocoa powder – 1 point
  • 1 tbsp light butter – 1 point
  • 2–3 tbsp unsweetened almond milk – 0 points
  • 1/2 tsp vanilla extract

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Spray a mini muffin tin with nonstick spray.
  2. In a bowl, whisk together the flour, cocoa, sweetener, baking soda, and salt.
  3. In a separate bowl, mix applesauce, almond milk, vanilla, and melted butter. Combine wet and dry ingredients.
  4. Spoon batter evenly into 24 mini muffin cups.
  5. Bake 10–12 minutes, or until a toothpick comes out clean. Cool completely.
  6. While cooling, whisk together icing ingredients in a small saucepan over low heat or mix in a bowl until smooth.
  7. Drizzle or spoon icing over each cooled bite.
