📝 Ingredients:
- 4 salmon fillets (4–5 oz each) – 0 points (for most plans)
- 2 tbsp light butter (like Land O’Lakes Light or I Can’t Believe It’s Not Butter Light) – 2–4 points
- 3 cloves garlic, minced – 0 points
- 1 lemon, thinly sliced
- 1 tbsp lemon juice
- Salt & pepper, to taste
- 1 tsp dried parsley or Italian herbs

👩🍳 Instructions:
- Preheat oven to 400°F (200°C) or heat grill to medium.
- Cut 4 large pieces of foil (or parchment), enough to wrap each salmon fillet.
- Place salmon in the center of each foil sheet. Top with:
- ½ tbsp light butter
- 1 clove garlic
- A few lemon slices
- Salt, pepper, and herbs
- Add optional veggies around the salmon if using.
- Drizzle a little lemon juice over each.
- Fold foil into packets, sealing edges tightly.
- Bake for 15–20 minutes or until salmon flakes easily with a fork.
- On grill: Cook for 12–15 minutes, flipping once halfway through.
