🧀 Ingredients:

  • 1 cup low-fat cottage cheese (1% or fat-free for 0–1 points)
  • 2 large eggs
  • 2 large egg whites
  • 1 cup unsweetened applesauce
  • ¼ cup unsweetened almond milk (or skim milk)
  • ½ tsp vanilla extract
  • 1 tbsp honey or maple syrup (optional – can omit for fewer points)
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup quick oats or rolled oats
  • 1 cup fresh or frozen blueberries (no sugar added)
  • Optional: zest of ½ a lemon for brightness

🥣 Instructions:

  1. Preheat oven to 350°F (175°C). Lightly spray an 8×8-inch baking dish with cooking spray.
  2. In a large mixing bowl, whisk together:
    cottage cheese, eggs, egg whites, applesauce, almond milk, vanilla, honey (if using), cinnamon, and salt.
  3. Stir in oats until well combined.
  4. Gently fold in the blueberries and lemon zest (if using).
  5. Pour the mixture into the prepared baking dish and smooth the top.
  6. Bake for 35–40 minutes, or until the center is set and a toothpick comes out mostly clean.
  7. Let cool slightly. Slice into 6 squares. Serve warm or chilled!
