🧀 Ingredients:
- 1 cup low-fat cottage cheese (1% or fat-free for 0–1 points)
- 2 large eggs
- 2 large egg whites
- 1 cup unsweetened applesauce
- ¼ cup unsweetened almond milk (or skim milk)
- ½ tsp vanilla extract
- 1 tbsp honey or maple syrup (optional – can omit for fewer points)
- ½ tsp cinnamon
- ¼ tsp salt
- ½ cup quick oats or rolled oats
- 1 cup fresh or frozen blueberries (no sugar added)
- Optional: zest of ½ a lemon for brightness
🥣 Instructions:
- Preheat oven to 350°F (175°C). Lightly spray an 8×8-inch baking dish with cooking spray.
- In a large mixing bowl, whisk together:
cottage cheese, eggs, egg whites, applesauce, almond milk, vanilla, honey (if using), cinnamon, and salt. - Stir in oats until well combined.
- Gently fold in the blueberries and lemon zest (if using).
- Pour the mixture into the prepared baking dish and smooth the top.
- Bake for 35–40 minutes, or until the center is set and a toothpick comes out mostly clean.
- Let cool slightly. Slice into 6 squares. Serve warm or chilled!
