🧄 Garlic Chicken with Broccoli & Spinach (Air Fryer)

Ingredients:

  • 2 chicken breasts, cut into bite-size chunks
  • 2 cups broccoli florets
  • 1 cup fresh spinach
  • 2–3 cloves garlic, minced
  • 1½ tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp paprika (optional for color)
  • Salt & pepper to taste
  • Juice of ½ lemon (optional for brightness)
  • Fresh parsley (optional garnish)

Instructions:

  1. Marinate Chicken
    In a bowl, toss chicken pieces with olive oil, garlic, oregano, paprika, salt, and pepper. Let sit for 10–15 mins while prepping veggies.
  2. Preheat Air Fryer
    Set to 375°F (190°C).
  3. Air Fry Chicken & Broccoli
    Add chicken and broccoli to the air fryer basket. Cook for 12–14 minutes, shaking halfway through, until chicken is golden and cooked through (internal temp: 165°F / 74°C).
  4. Add Spinach
    Toss in the fresh spinach for the last 1–2 minutes of cooking just to wilt it slightly.
  5. Finish & Serve
    Squeeze lemon juice over everything (optional), sprinkle chopped parsley, and serve warm!
