🧄 Garlic Chicken with Broccoli & Spinach (Air Fryer)

Ingredients:
- 2 chicken breasts, cut into bite-size chunks
- 2 cups broccoli florets
- 1 cup fresh spinach
- 2–3 cloves garlic, minced
- 1½ tbsp olive oil
- 1 tsp dried oregano
- ½ tsp paprika (optional for color)
- Salt & pepper to taste
- Juice of ½ lemon (optional for brightness)
- Fresh parsley (optional garnish)
Instructions:
- Marinate Chicken
In a bowl, toss chicken pieces with olive oil, garlic, oregano, paprika, salt, and pepper. Let sit for 10–15 mins while prepping veggies. - Preheat Air Fryer
Set to 375°F (190°C). - Air Fry Chicken & Broccoli
Add chicken and broccoli to the air fryer basket. Cook for 12–14 minutes, shaking halfway through, until chicken is golden and cooked through (internal temp: 165°F / 74°C). - Add Spinach
Toss in the fresh spinach for the last 1–2 minutes of cooking just to wilt it slightly. - Finish & Serve
Squeeze lemon juice over everything (optional), sprinkle chopped parsley, and serve warm!
