Easy Beef Tomato Soup (Slow Cooker Version)

Ingredients:

  • 1 lb ground beef, browned and drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1 large onion, chopped
  • 2-3 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 ½ cups cooked noodles (add when serving)
  • Optional garnishes: grated Parmesan, fresh parsley

Instructions:

  1. Brown the Ground Beef:
    In a skillet, brown the ground beef over medium heat, then drain the excess fat.
  2. Combine Ingredients:
    Transfer the browned beef to a slow cooker. Add the diced tomatoes, tomato sauce, beef broth, chopped onion, garlic, carrots, celery, Italian seasoning, salt, and pepper. Stir everything together.
  3. Cook in the Slow Cooker:
    Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  4. Prepare the Noodles:
    Before serving, cook the noodles separately according to the package instructions. Add a portion of noodles to each serving bowl and ladle the soup on top.
  5. Serve:
    Garnish with Parmesan or fresh parsley, if desired. Enjoy!
