Air Fryer Bread Pudding

This classic bread pudding recipe gets a modern twist by using the air fryer for a perfectly baked dessert with a golden, caramelized top. It’s moist, flavorful, and incredibly easy to make!

Ingredients

  • 400g bread (approximately half a loaf), torn into pieces
  • 600ml milk
  • 500g mixed dried fruit
  • 100g caster sugar
  • 50g self-raising flour
  • 1½ tablespoons mixed spice
  • 2 eggs, beaten
  • 100g unsalted butter, melted
  • Extra sugar for sprinkling

Instructions

Step 1: Soak the Bread

  1. Tear the bread into small pieces and place it in a large mixing bowl.
  2. Pour the milk over the bread and leave to soak for 10 minutes.
  3. Using a spoon or your hands, mush the soaked bread and milk together into a paste-like mixture.

Step 2: Add the Remaining Ingredients 4. Stir in the mixed dried fruit, caster sugar, self-raising flour, mixed spice, beaten eggs, and melted butter. Mix well until all the ingredients are evenly combined.

Step 3: Prepare for Air Frying 5. Pour the mixture into a tray or divide it into two smaller portions if needed. Sprinkle a little sugar on top for a caramelized finish.

Step 4: Cook in the Air Fryer 6. Preheat the air fryer to 150°C (300°F). 7. Place the tray(s) in the air fryer and cook at 150°C for 70 minutes. 8. If needed, increase the temperature to 180°C (350°F) and cook for an additional 8 minutes to brown the top.
