Ingredients:

For the Chicken:

  • 4 large chicken breasts (boneless, skinless)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

For the Stuffing:

  • 1 cup broccoli florets, finely chopped (fresh or steamed)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cream cheese, softened
  • 2 tbsp grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
    • Lightly grease a baking dish with olive oil or cooking spray.
  2. Prepare the Chicken:
    • Pat the chicken breasts dry with paper towels.
    • Using a sharp knife, carefully cut a pocket into the side of each chicken breast. Do not cut all the way through.
    • Season the outside of each chicken breast with garlic powder, paprika, salt, and pepper.
  1. Make the Stuffing:
    • In a medium bowl, combine broccoli, cheddar cheese, cream cheese, Parmesan cheese, minced garlic, salt, and pepper.
    • Mix until everything is well combined.
  2. Stuff the Chicken:
    • Spoon the broccoli and cheese mixture evenly into each chicken pocket.
    • Use toothpicks to seal the opening if needed to keep the filling inside.
  3. Sear the Chicken (Optional but Recommended):
    • Heat 2 tbsp olive oil in a skillet over medium-high heat.
    • Sear the stuffed chicken breasts for about 2 minutes per side, just until golden brown.
  4. Bake the Chicken:
    • Transfer the chicken breasts to the prepared baking dish.
    • Bake in the preheated oven for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  5. Rest and Serve:
    • Let the chicken rest for 5 minutes before serving.
    • Remove toothpicks if used.
  6. Garnish and Serve:
    • Garnish with fresh parsley or an extra sprinkle of cheese if desired.
    • Serve with your favorite side dishes, such as roasted vegetables, rice, or a fresh salad.

Tips:

  • Cheese Choices: Use mozzarella or Swiss cheese for a gooier filling.
  • Broccoli Prep: If using fresh broccoli, lightly steam it before mixing with the cheese.
  • Avoid Overcooking: Use a meat thermometer to ensure the chicken doesn’t dry out.

This Broccoli and Cheese Stuffed Chicken Breast is creamy, cheesy, and packed with flavor in every bite. Enjoy a satisfying and nutritious meal that’s sure to impress! 🥦🧀🍗✨
