WW-Friendly Cabbage and Ground Beef

Ingredients:
- 1 lb lean ground beef (90% lean or higher)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups cabbage, shredded (about 1/2 head of cabbage)
- 1/2 cup low-sodium beef broth (or water)
- 1 (14.5 oz) can diced tomatoes (no added sugar or salt)
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (optional, adjust to taste)
- 1 tablespoon olive oil (or use cooking spray for fewer points)
- 1/2 cup frozen peas (optional for added veggies)
Instructions:
1. Brown the Ground Beef:
- In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
- Add the ground beef to the pan and cook, breaking it up with a spoon or spatula, until it’s browned and cooked through (about 6-7 minutes).
- Drain any excess fat if necessary (you can also use leaner ground beef to minimize fat).
2. Sauté the Vegetables:
- Add the diced onion and minced garlic to the skillet with the beef. Sauté for 3-4 minutes, or until the onion becomes translucent and soft.
3. Add the Cabbage:
- Stir in the shredded cabbage, and cook for another 3-4 minutes, allowing it to wilt down a bit. The cabbage will shrink as it cooks.
4. Add the Tomatoes and Spices:
- Add the diced tomatoes (with juices), tomato paste, paprika, cumin, pepper, and salt to the skillet. Stir well to combine all the ingredients.
5. Simmer:
- Pour in the beef broth (or water) and bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for 15-20 minutes, stirring occasionally, until the cabbage is tender and the flavors have melded together. If using peas, add them during the last 5 minutes of cooking.
6. Serve:
- Once the cabbage is tender and the dish has thickened to your liking, taste and adjust the seasoning if needed (more pepper, salt, or even a splash of hot sauce if you like heat).
- Serve hot and enjoy!
