Air Fryer Chicken and Pineapple Rice Recipe
Ingredients
- 1 pound chicken breast, cubed
- 1 cup pineapple, cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup jasmine rice
- 2 cups chicken broth

Instructions
- Prep the Chicken:
- In a large mixing bowl, toss the cubed chicken with salt and pepper.
- Air Fry the Chicken:
- Preheat your air fryer to 380°F (193°C).
- Place the seasoned chicken in the air fryer basket in a single layer.
- Air fry for 12-15 minutes or until golden brown and cooked through, shaking the basket halfway through for even cooking.
- Cook the Vegetables:
- In a skillet over medium heat, add olive oil.
- Sauté the chopped onion, minced garlic, and diced red bell pepper until softened, about 5-7 minutes.
- Add Pineapple:
- Stir in the cubed pineapple and cook for an additional 2 minutes.
- Prepare the Rice:
- In the same skillet, add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is cooked.
- Combine and Serve:
- Once the rice is done, return the air-fried chicken to the skillet, mixing everything well.
- Serve garnished with sliced green onions and sesame seeds.
