Spicy Pumpkin Rigatoni with Turkey Sausage
Ingredients:
- 8 oz rigatoni pasta
- 8 oz ground turkey sausage (lean)
- 1 cup canned pumpkin puree (unsweetened)
- 1/2 cup chicken broth (low-sodium)
- 1/2 cup unsweetened almond milk (or any low-calorie milk)
- 2 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (adjust to taste)
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 2 cups fresh spinach (you used this as a substitute for kale)
- 1/4 cup grated Parmesan cheese (optional for topping)
Instructions:
- Cook the pasta: In a large pot, cook the rigatoni according to the package instructions until al dente. Drain and set aside.
- Cook the turkey sausage: Heat olive oil in a large skillet over medium heat. Add the ground turkey sausage and cook until browned, breaking it up with a spoon. This should take about 5–7 minutes.
- Add garlic and spices: Stir in the minced garlic, crushed red pepper flakes, cinnamon, and nutmeg. Cook for 1-2 minutes until the garlic is fragrant.
- Add the pumpkin: Stir in the pumpkin puree, chicken broth, and almond milk. Bring the mixture to a simmer, letting it thicken slightly, about 3–4 minutes.
- Combine and add greens: Add the fresh spinach and cook until wilted, stirring occasionally.
- Combine with pasta: Add the cooked rigatoni to the skillet, tossing everything together until well coated. Let the pasta absorb the sauce for a couple of minutes.
- Serve: Serve hot, garnished with grated Parmesan cheese if desired. Adjust seasoning with salt and pepper to taste.
Tips:
- Pumpkin substitution: You can use butternut squash puree for a similar flavor.
