Keto Smash Burger Quesadilla
Ingredients:

For the Smash Burger:

  • 1 lb ground beef (80/20 for best flavor)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon butter or olive oil (for cooking)

For the Quesadilla:

  • 4 large keto-friendly tortillas (check carb count on package or make your own almond flour/coconut flour tortillas)
  • 1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 1/2 cup shredded lettuce
  • 1/4 cup diced pickles
  • 1/4 cup diced onions
  • 1/4 cup sugar-free ketchup (or mayo if preferred)
  • 2 tablespoons mustard
  • 1-2 tablespoons butter (for cooking tortillas)

Instructions:

1. Make the Smash Burgers:

  • Form beef balls: Divide the ground beef into 4 equal portions and gently roll each into a ball.
  • Heat skillet: Preheat a cast-iron skillet over medium-high heat. Add a little butter or oil.
  • Smash the burgers: Place each beef ball onto the skillet and use a heavy spatula to press down the beef into a flat patty. Season with salt, pepper, garlic powder, and onion powder. Cook for 2-3 minutes on each side until browned and crispy. Set aside.

2. Prepare the Quesadilla:

  • Assemble: On one keto tortilla, sprinkle a layer of shredded cheese. Place one smash burger patty on top, add a bit of shredded lettuce, pickles, onions, a drizzle of ketchup, and mustard. Sprinkle more cheese on top, then place another tortilla to sandwich everything together.
  • Cook the quesadilla: Heat a clean skillet over medium heat. Add a little butter. Place the quesadilla into the skillet and cook for 2-3 minutes on each side until golden brown and crispy, and the cheese has melted.
  • Repeat: Repeat the process for the remaining quesadillas.

3. Serve:

  • Slice and enjoy: Slice each quesadilla into wedges and serve with optional sides like guacamole, extra pickles, or keto-friendly dipping sauces.

  1. Keto Tortillas: Look for low-carb tortillas at the store (many have around 3-4g net carbs per tortilla), or make your own using almond flour or coconut flour.
