Ingredients:
1 small bag fresh baby spinach
1 dash pepper
1 dash herb and garlic seasoning
8 oz shredded mozzarella cheese
6 thin-sliced chicken breasts
1 container green onion cream cheese (or regular cream cheese)
1/4 cup olive oil
1/2 cup chicken broth (preferably low-sodium)
1 large package sliced mushrooms
Instructions:
Prepare the Chicken:
Preheat your oven to 375°F (190°C).
In a 9×13 baking pan, lay out the chicken breasts in a single layer.
Top with fresh spinach leaves and sliced mushrooms.
Sprinkle with pepper and herb & garlic seasoning.
Make the Sauce:
Soften the green onion cream cheese in a microwave for about 30 seconds.
Whisk in the olive oil and chicken broth until the mixture is smooth and creamy.
Bake:

Lay a piece of foil over the top of the pan, but do not seal it.
Bake for 20 minutes covered with foil, then remove the foil and bake uncovered for another 20-25 minutes.

Sprinkle the shredded mozzarella cheese on top and bake uncovered for an additional 10 minutes, or until the cheese begins to brown.
Cool and Serve:
