Ingredients:

1 large apple (Granny Smith or Honeycrisp, peeled, cored, and diced into small pieces)
1 cup self-rising flour (you can also use whole wheat flour to add fiber)
1/4 cup unsweetened applesauce (to reduce fat and points)
1/4 cup non-fat Greek yogurt (adds protein and moisture)
1 tablespoon sugar substitute (such as Stevia or Splenda, or use 1 tablespoon maple syrup for natural sweetness)
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 large egg
1/4 cup skim milk (or almond milk)
Cooking spray (for frying or baking)
For the Glaze (optional):
1/4 cup powdered sugar
1-2 teaspoons skim milk (or almond milk)
1/2 teaspoon vanilla extract
Directions:
Prepare the Apples: In a medium bowl, combine the diced apples with cinnamon and set aside.
Make the Batter: In another bowl, whisk together the flour, sugar substitute, applesauce, Greek yogurt, egg, vanilla extract, and milk until well combined. Fold in the diced apples.
Cooking Option 1 – Air Fryer:
Preheat your air fryer to 375°F (190°C). Lightly spray the basket with cooking spray.
Scoop tablespoon-sized portions of the batter into the air fryer basket, making sure they don’t touch. Spray the tops lightly with cooking spray.

Cook for 5-7 minutes or until golden brown and cooked through.
Cooking Option 2 – Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
Scoop tablespoon-sized portions of the batter onto the prepared baking sheet, spacing them slightly apart.
Bake for 10-12 minutes, or until the bites are golden brown and cooked through.
Glaze (Optional): In a small bowl, mix the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the warm apple fritter bites, if desired.
