Weight Watchers Strawberry Bombs
Ingredients:
- 2 cups whole wheat flour
- 1 large egg
- 1/4 cup sugar substitute (like Stevia or Splenda)
- Pinch of salt
- 2 1/4 teaspoons dry yeast
- 3/5 cup warm skim milk
- 1/4 cup light butter (softened)
- Cooking spray (for frying)
- 1 cup fat-free whipped topping
- 1 cup fresh strawberries, chopped
- Powdered sugar substitute (for garnish)
Directions:
- Prepare the Yeast Mixture:
- In a medium bowl, combine the sugar substitute, yeast, and warm skim milk. Stir to dissolve.
- Whisk in the egg.
- Make the Dough:
- Add the whole wheat flour and salt, and start to mix the dough with a spatula. Continue to knead it with your hands until you receive an elastic dough.
- Add the light butter and continue to knead until the butter is fully incorporated into the dough.
- Form a ball from the dough, cover with a kitchen cloth or plastic wrap, and allow to rise for an hour.
- Form the Dough Balls:
- Divide the dough into 8 parts and roll each into a ball. Cover and let sit for 30 minutes.
- Flatten each ball a bit and roll it again into a ball. Cover and let sit for another 30 minutes.
- Cook the Dough Balls:
- Spray a pan with cooking spray and heat over medium-low heat. Fry the balls in the pan for 2-3 minutes on each side until golden brown.
- Let them cool a bit and cut in half lengthwise, like a burger bun.
- Assemble the Strawberry Bombs:
- Top one half of each dough ball with fat-free whipped topping and chopped strawberries. Close with the other half.
- Sprinkle with powdered sugar substitute and serve.
