Grilled Tofu Salad

Ingredients:

  • 1 block extra-firm tofu, pressed and sliced into cubes
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 cups mixed salad greens (spinach, arugula, or lettuce)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 cup sliced almonds or pumpkin seeds (optional)
  • Fresh herbs (such as cilantro or basil) for garnish

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Prepare the Tofu:
  • Preheat a grill pan or skillet over medium-high heat.
  • In a bowl, combine soy sauce, olive oil, smoked paprika, salt, and pepper. Toss the tofu cubes in this mixture until well-coated.
  • Grill the tofu for about 3-4 minutes on each side, or until nicely charred. Remove from heat and set aside.

  • In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper until emulsified. Set aside.

  • Add the grilled tofu cubes on top.

  • If using, sprinkle sliced almonds or pumpkin seeds on top for added crunch.
  • Garnish with fresh herbs.
