Grilled Tofu Salad
Ingredients:
- 1 block extra-firm tofu, pressed and sliced into cubes
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 cups mixed salad greens (spinach, arugula, or lettuce)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup sliced almonds or pumpkin seeds (optional)
- Fresh herbs (such as cilantro or basil) for garnish
For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- Prepare the Tofu:
- Preheat a grill pan or skillet over medium-high heat.
- In a bowl, combine soy sauce, olive oil, smoked paprika, salt, and pepper. Toss the tofu cubes in this mixture until well-coated.
- Grill the tofu for about 3-4 minutes on each side, or until nicely charred. Remove from heat and set aside.
- Make the Dressing:
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper until emulsified. Set aside.
- Assemble the Salad:
- In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and avocado slices.
- Add the grilled tofu cubes on top.
- Drizzle the dressing over the salad and gently toss to combine.
- If using, sprinkle sliced almonds or pumpkin seeds on top for added crunch.
