Ingredients:
- 1 tin/jar (400g) chickpeas, rinsed and drained
- 1 medium red onion, chopped
- 2-3 gherkins, chopped
- 100 ml tomato passata
- 1 tablespoon vegan mayonnaise or soy yogurt
- Salt, pepper, and paprika to taste
- Lemon wedges
- Mixed salad greens
Instructions:
- Lightly smash the rinsed chickpeas with a fork or potato masher.
- Add the chopped red onion and gherkins to the chickpeas.
- Mix in the tomato passata.
- Stir in the vegan mayonnaise or soy yogurt until well combined.
- Season with salt, pepper, and paprika to taste.
- Serve with lemon wedges on the side and a bowl of mixed salad greens.
