Dolly Parton’s Five Layer Dinner (Weight Watchers version)

Ingredients:

  • 1 lb extra-lean ground turkey
  • 1 small onion, chopped
  • 1 cup sliced carrots
  • 1 cup diced potatoes
  • 1 cup frozen green beans
  • 1 cup diced tomatoes (canned, no salt added)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and ground turkey. Cook until turkey is browned and onions are translucent.
  3. Spread the ground turkey mixture evenly on the bottom of a baking dish sprayed with non-stick spray.
  4. Layer sliced carrots on top of the turkey mixture.
  5. Next, layer diced potatoes over the carrots.
  6. Add a layer of frozen green beans.
  7. Spread diced tomatoes over the green beans.
  8. Season with salt and pepper to taste.
  9. Cover the baking dish with foil and bake for 45-50 minutes, or until vegetables are tender.
  10. Remove foil and bake for an additional 10-15 minutes to allow the top to brown slightly.
  11. Let it cool for a few minutes before serving.
